Banana Oat Pancakes

Ingredients

  • 2 packets of Avelina Banana Maple Instant Oatmeal
  • ⅓ cup almond flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ½ cup non-dairy milk
  • ½ banana
  • ⅓ cup non-dairy yogurt
  • 1 egg
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Instructions

  • In a blender, combine all of the ingredients. Let batter sit for 10 minutes.
  • Heat a pan over medium-low heat and grease with non-dairy butter. Scoop the batter onto
    the pan. Let cook for 2-3 minutes, or until bubbles form. Then, flip the pancakes and
    cook for an additional 2-3 minutes. Serve warm.
